This is such an easy and quick salad which I particularly love combining with dishes such as pies (like this cheese pie) but it can certainly do as a light meal by itself. The wonderful colours of the vegetables, together with its fresh and crunchy taste makes it one of my favourite salads.
I like combining red and white cabbage due to the amazing colour palette they create and the different dimensions of flavour they offer. Red cabbage has a deeper and spicier taste whilst white cabbage is slightly sweeter. In any case you can definitely use just one coloured cabbage if you prefer.
Ingredients
- half red and half white cabbage
- 1 celery stick
- half bunch of parsley
- 1 carrot
- 2 roasted sweet red peppers
- 1/4 cup of extra virgin olive oil
- 2 tea spoons of white wine vinegar
- salt to your preference
Method
- Peel and shred the carrot.
- Chop the celery, the sweet roasted red peppers, the cabbages into thin slices.
- Finely chop the parsley.
- Mix all vegetables together in a bowl and add the olive oil, the vinegar and the salt.
- Massage the salad to mix up the flavours and serve.
