Multicoloured cabbage salad (or politiki salad)

This is such an easy and quick salad which I particularly love combining with dishes such as pies (like this cheese pie) but it can certainly do as a light meal by itself. The wonderful colours of the vegetables, together with its fresh and crunchy taste makes it one of my favourite salads.

I like combining red and white cabbage due to the amazing colour palette they create and the different dimensions of flavour they offer. Red cabbage has a deeper and spicier taste whilst white cabbage is slightly sweeter. In any case you can definitely use just one coloured cabbage if you prefer.

Ingredients

  • half red and half white cabbage
  • 1 celery stick
  • half bunch of parsley
  • 1 carrot
  • 2 roasted sweet red peppers
  • 1/4 cup of extra virgin olive oil
  • 2 tea spoons of white wine vinegar
  • salt to your preference

Method

  1. Peel and shred the carrot.
  2. Chop the celery, the sweet roasted red peppers, the cabbages into thin slices.
  3. Finely chop the parsley.
  4. Mix all vegetables together in a bowl and add the olive oil, the vinegar and the salt.
  5. Massage the salad to mix up the flavours and serve.
