Overnight oats

This has recently been my go to breakfast. It is easy, quick, filling and absolutely adaptable. Quite often, I happen not to have all the ingredients below, but I will use whatever I have available-bananas, berries, peanut butter, dried coconut flakes, chia seeds. The version below is quite classic but very tasty and I hope you enjoy it too.

Ingredients (for 3 servings)

  • 250 grams of yogurt
  • 50 grams of oats
  • 100 ml of milk (dairy or non dairy); I used oat milk
  • 1 tbl spoon of honey
  • 1 tbl spoon of raisins
  • 1 grated apple
  • 1 tbl spoon of pomegranate (for serving)
  • 1 tbl spoon of dried nuts of your selection (for serving); I used cranberries, almonds and cashews

Method

  1. Mix in a bowl the milk, the grated apple, the raisins, the oats and the honey. Cover the bowl and store in the fridge overnight.
  2. The next day add the yogurt and top with the pomegranate and the dried nuts.
